Hello! Here is another one of my student staples: sweet potato fries! They are so easy, inexpensive, and take approximately one episode of Parks & Rec to bake. [That's 21 minutes for those poor unfortunate souls not familiar with Leslie Knope's particular brand of beautiful crazy.]
Anyways. You'll need:
1 large sweet potato, peeled and sliced into skinny fry-shapes
A leeeetle squirt of lemon juice
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon Italian herbs + spices
Place the potato slices into a large bowl and pour about 2 teaspoonfuls of olive oil over the top, as well as the lemon juice. Then throw all the dry seasonings in and toss the bowl to coat. Make sure all the potatoes are oiled up and spiced up.
Bake them for about 20 minutes at 200 degrees Celcius. They should lie flat on a baking tray covered with parchment paper. I usually check them about halfway through and turn them if they need. Sweet potatoes seem to have a mind of their own; sometimes after 15 minutes they're done and sometimes they need a bit more TLC. I like a food that's unpredictable.
